I'd like to be able to make workflows per each event type and have flashquotes automatically enroll the lead in the associated workflow when they request a quote.

We just released Workflows v2, including the ability to use conditional logic to determine the path the workflow takes.
For this case, you can use the "Quote created" trigger, ensuring it's filtered to start from instant quotes. You can then add a "branch" that takes different paths based on the event type on the quote.
